Elizabeth earned her Doctorate in Clinical Nutrition from University of Western States, MS in Nutrition Education from American University, and Bachelor's in Biology from Hendrix College. A seasoned molecular biologist, she spent over two decades in global biotech operations and quality management leadership, supporting a variety of genetic and oncology assays before moving back to her roots in healthcare. Those years of global work fostered a love for travel and learning about the relationships between culture and food. She has a passion for education and served as a course facilitator and adjunct instructor in the MSNE program at American University before coming to UWS. In addition to her work as a course facilitator in the MS-HNFM program, Elizabeth is entering her 2nd year as a naturopathic medical student and runs a private nutrition practice supporting intuitive eating and behavior change, cooking skills for adolescents and young adults, older adult care, and supplement compliance. Her joy comes in seeing clients become empowered to support their health through education and practiced behavior change.
She is always looking for a new travel adventure, testing recipes, and spending as much time as possible with her best friend and furry companion, Riley. `
